A quick mushroom soup

I stole this recipe from the Internet and slightly modified it by adding parsley root and carrot.


1 bag of mixed mushrooms from Krkonose, frozen (equals 2 handfuls of fresh mushrooms)
1 onion
1 carrot
1 parsley root
1 cup of milk
2 spoons butter
4 cups of vegetable stock (I used 2 industrial cubes)
3 potatoes
1 spoon flour
salt, black pepper, caraway seeds

Peel and chop the potatoes, carrot and parsley root, add mushrooms and cold vegetable stock (or water with the ready-made cubes) and bring to boil. Simmer for about 15 min.

In the meantime, cook the finely chopped onion in butter and once it turns golden, add the flour; mix well and cook for a minute or two until it's nicely golden again. Add the milk and bring to simmer.

Stir the mixture into the boiling soup and cook for another couple of minutes. Add salt, freshly ground black pepper and caraway seeds. Add some chopped fresh parsley, if available. Let the soup rest a bit, then serve. Bon apetit!
