I'm too lazy to write in Czech tonight, sorry, guys. The secret to a really good steak is a touch of a man's hand. And a bottle of wine.

This is why tonight i grab my camera and watch. Wannes is cooking simple steaks with mushrooms. The process starts by opening a bottle of wine and pouring out two glasses. Never cook with wine you would not drink yourself! :-) We got a bottle of Veltlinske zelene from Vino Mikulov. Nothing special but nothing insulting either.

Steak is a really simple thing if you follow a few basic rules. Rule number one: get hold of proper meat. We tend to get the best results with the steak meat from Kaufland, it's imported from Germany. You can get a 200 g steak for approx. 80 Czech crowns.

All you need is some pepper and some butter. Put a good slab of butter into a hot pan and wait until it melts and bubbles up. Ground some fresh pepper onto your steaks or sprinkle them with some white pepper from a bag. Throw the steaks into the hot pan and cook for a few minutes on each side. Do not poke them with a fork, there is no point in wasting precious juice.

You need to decide for yourself for how long you want to cook them. My favourite doneness is like this:

One of the blessed things Wannes has taught me is to eat my meat pink. Before, I preferred to cook into a tough piece of sole :-)

Take your steaks out of the pan, sprinkle some salt on the top and wrap them into tinfoil. This will allow the meat to rest and keep warm while you are making the sauce. Mushroom sauce is really easy. Throw a handful of chopped onions into the pan where you cooked your steaks. You might need to add a bit of butter into it. Cook the onions and when they're soft, glaze the surface with a generous splash of dry white wine. The wine will both add flavour and body to the sauce, and also release the cooked up juices. By the way, a good alternative to white wine (my idea) is Jack Daniels. Really, you should give it a try. Now add the mushrooms and once they're soft, add a bit of cream and salt to taste.

Serve with boiled potatoes or mashed potatoes and good wine. Smaaklijk!
